What actually matters in an espresso grinder
Burr size, stepped versus stepless, and retention. Three specifications that change results, and a long list that does not.
The grinder is the part of an espresso setup that most changes what is in the cup, and the part most people underspend on. It is also the part where the specification sheet is least helpful, because most of what is printed on it does not matter.
Here is what does.
Burr type: conical or flat
Both work. The differences are real but smaller than the arguments about them suggest.
- Conical burrs are common at every price level, generally cheaper to make at a given size, and typically produce a slightly wider particle distribution — which many people read as more body and less clarity.
- Flat burrs typically produce a narrower distribution — read as more clarity and separation — and tend to retain more grounds inside the grinder.
Neither is better. A large conical set outperforms a small flat set, and both outperform a blade grinder by an enormous margin.
Burr size is the specification that matters
For a given design, larger burrs cut more coffee per revolution, which means less heat, less time, and a more consistent grind. It is the single most predictive number on a grinder's spec sheet.
Roughly, for home espresso: 38–40 mm conical is entry level; 54–58 mm conical or 58–64 mm flat is a substantial step up; beyond that you are into grinders designed for volume rather than for one household.
Stepped or stepless adjustment
- Stepped grinders click between fixed positions. Repeatable and easy to return to a known setting — but if the right grind for your coffee falls between two clicks, you cannot have it.
- Stepless grinders adjust continuously. You can land exactly where you want, at the cost of not being able to write the setting down as a number.
For espresso, where the useful range is narrow, stepless is genuinely better. For a grinder shared between espresso and filter, stepped is more forgiving.
Retention and single dosing
Retention is the coffee that stays inside the grinder after a dose. It matters for two reasons: it is stale by the time it comes out, and it makes weighing harder because what you put in is not what you get out.
Single dosing — weighing beans per shot instead of keeping a full hopper — is now normal at home, and grinders differ enormously in how well they support it. A grinder with low retention and a bellows or a short chute gives you back nearly what you put in. A grinder designed around a full hopper may hold several grams, which never comes out until the next dose pushes it through.
If you change beans often, low retention matters more than burr material.
What does not matter as much as the marketing suggests
- Motor wattage. A number that describes the motor, not the grind.
- RPM, in isolation. Slower is generally cooler, but it interacts with burr geometry and cannot be read on its own.
- Timed dosing, if you own a scale. Timers dose by seconds; beans vary by density and by day. Weigh instead.
- Number of grind settings. A stepless grinder has infinite settings and prints none.
The grinder-versus-machine question
The usual advice is to spend more on the grinder than people expect, and it survives scrutiny: a modest machine with a good grinder makes better coffee than a good machine with a modest grinder. The machine controls temperature and pressure; the grinder controls the surface area those act on, and no amount of pressure stability rescues an inconsistent grind.
