Single boiler, heat exchanger or dual boiler: what actually changes
Three boiler layouts, three genuinely different machines. The difference is not quality — it is whether you can brew and steam at the same time.
Almost every espresso machine above the very cheapest falls into one of three boiler layouts. The labels appear on nearly every listing, and they describe a real functional difference — unlike most of the language in machine marketing.
Single boiler, dual use
One boiler, heated to brew temperature for a shot and then to a much higher temperature for steam.
What it means in practice: you cannot brew and steam at once. You pull the shot, flip to steam, wait for the boiler to climb, steam the milk, and then wait — or run water through — for it to come back down before the next shot.
The wait is the whole story. Going up takes tens of seconds. Coming back down takes longer, because you have to actively cool the boiler by flushing.
Who it suits: one or two milk drinks at a time, made unhurried. Espresso-only drinkers, for whom the limitation never appears at all.
What it costs to run: the least. One small boiler heats fast and holds little water.
Heat exchanger
One boiler held permanently at steam temperature, with a tube running through it carrying fresh water to the group. Water passing through that tube picks up heat on the way.
What it means in practice: brewing and steaming happen simultaneously, with no switching and no waiting. This is the layout that made prosumer machines feel like café machines.
The catch is the cooling flush. Water sitting in the exchanger between shots overheats. Before pulling, you run a short burst through the group to push that overheated water out. Learning your machine's flush is a real, if small, skill, and it is why HX machines have a reputation for being fussy about temperature.
Who it suits: people making several milk drinks in a row, who do not mind a routine.
What it costs to run: more than a single boiler — a large boiler at steam temperature all day — but less than a dual boiler.
Dual boiler
Two boilers, one at brew temperature and one at steam temperature, each independently controlled.
What it means in practice: simultaneous brew and steam, no cooling flush, and brew temperature you can set directly rather than infer. This is the layout that makes temperature an adjustable variable instead of a fixed property.
Who it suits: people who change beans often and want to change brew temperature with them, and anyone making milk drinks back to back.
What it costs to run: the most, in energy and in purchase price, and there are two of everything to maintain and descale.
The honest ranking
There is not one. A dual boiler is not a better machine than a single boiler; it is a machine that removes a wait that some people never notice. The genuinely useful question is: do you make milk drinks, and do you make more than one at a time?
- No milk, or one drink at a time: single boiler is enough, and the money is better spent on the grinder.
- Two or more milk drinks, regularly: heat exchanger or dual boiler.
- You care about setting brew temperature per bean: dual boiler.
Where price comes into it
The three layouts sit in different price bands, but the bands overlap heavily, and the same machine varies a great deal between retailers.
