Water for espresso: the variable that outranks your machine
The same beans, the same grinder and the same machine will make noticeably different coffee on different water. Here is what to change and what to ignore.
Espresso is about 90% water. That is not a rhetorical opening — it is the reason two people with identical equipment can get consistently different results, and why a café that moves premises sometimes has to re-learn its recipes.
Two properties of water matter, and they do different jobs.
Hardness decides how long the machine lives
Hardness is dissolved calcium and magnesium. Those minerals also carry flavour — water with essentially none of them makes coffee that tastes hollow and papery — but their main practical effect is that they precipitate as scale inside anything that heats water.
Measure it once. Hardness strips give you a number in ppm or grains, and that number sets your descaling interval more reliably than any manual. Everything else in this article follows from it.
Alkalinity decides how the coffee tastes
Alkalinity is the water's ability to neutralise acid — mostly bicarbonate. Coffee is acidic, and alkalinity buffers that acidity.
- High alkalinity flattens a shot. Brightness disappears, and the cup tastes dull and slightly chalky no matter how well it was extracted.
- Very low alkalinity leaves acidity unchecked. Shots taste sharp, sour and thin, and small brewing errors become large ones.
If your espresso tastes flat with beans that everyone else describes as fruity, alkalinity is the first suspect — not the grinder.
What to do about it
If your water is soft and tastes fine: use it. Filter for chlorine if you can taste chlorine. Do not over-engineer this.
If your water is hard: filter it before it goes in the tank. A jug filter with an ion-exchange cartridge reduces hardness materially, and it is the difference between descaling every six weeks and every three months. Change the cartridge on schedule — an exhausted cartridge is worse than none, because it stops exchanging and starts harbouring bacteria.
If your water is very hard and the machine is plumbed in: an inline softener or a proper filtration head is not a luxury. Scale in a plumbed machine accumulates faster because the machine never stops refilling.
Bottled water is a legitimate option and a surprisingly variable one. Mineral content is printed on the label; the ones that work for espresso are the low-mineral ones, not the ones marketed as mineral-rich. Read the numbers rather than the branding.
Distilled or reverse-osmosis water on its own is a mistake. It makes weak, empty coffee, and in a machine with a water-level probe it can stop the sensor working entirely, because the machine detects water by conductivity and pure water does not conduct. If you go the RO route, remineralise.
The one thing never to do
Do not put softened water from a whole-house sodium-exchange softener into an espresso machine without checking. That process swaps calcium for sodium: the scale problem improves, but sodium is corrosive to boilers over time and the coffee tastes salty-flat. It is a common and expensive surprise.

What follows from your water number
Once you know your hardness, two other decisions fall out of it immediately.
Your descaling interval. Hard water means every 4–8 weeks; soft or filtered means every few months. Guessing at this is how boilers die early — the detail is in descaling an espresso machine.
Where the rest of your budget goes. If water is the constraint, spending on a machine before fixing it is the wrong order. How to split a budget between machine, grinder and everything else puts water ahead of the machine deliberately, and this is why.
